Linzer Tart Sablé Cookies – LOVE!

What a LOVE-ly treat just in time for Valentine’s Day! My mom has been making these Linzer tart sablé cookies for many years much to our joy!

We always called them just “Linzer tarts” but then I found that they are actually “sablés” – originating in Sablé-sur-Sarthe, France circa 1670. The word, pronounced “sah-blay”, means “sand” which is meant to convey the crumbly texture of these shortbread-style cookies. There are many varieties but these are really wonderful.
The original shape was round but to celebrate all things love (and to make them just like Mom), we’ve given them some “heart”!

Here’s how:

INGREDIENTS:
• 1 cup butter
• 1/2 cup sugar
• 1 tsp vanilla
• 2-1/4 cups flour
• 1/2 cup walnuts, chopped finely
• 12 oz strawberry jam (or your favorite flavor)
• 1/2 cup confectioner’s sugar

DIRECTIONS:
1) Cream butter, sugar, and vanilla until well blended.
2) Gradually blend in flour to make a stiff dough. Mix in walnuts.
3) Roll out the dough a little less than 1/4” thick. Cut the cookies out using a 1-2” cookie cutter in your favorite shape. Using a cookie cutter the same shape but slightly smaller, cut half the quantity of cookies so each solid cookie has a cut-out cookie top.
4) Place them on a cookie sheet and bake at 350° for 10-12 minutes.
5) When cool, spread about 3/4 tsp jam on each solid cookie. Top with a cut-out cookie.
6) Sprinkle with confectioner’s sugar.

The jam sweetness with the crumbly nutty texture of the cookie are the perfect complement. Just like you and your loves, sweet and nutty!!
