Lent Me A Hand: Friday 6

It’s been a busy day! When you’re dashing around you need something especially fast to make and fabulously satisfying. Today it’s Mozzarella en Carozza.

Are you ready for this one??? So incredible and decadent! Easy, easy!

You can decide what quantities you need for how many you want and will let others have – haha! Simple… Using fresh or packaged mozzarella, add a couple of slices to a slice of your favorite bread. Add another piece of bread to make a sandwich. In a bowl, crack a couple of eggs, add salt and pepper, then dip your “sandwich” in on both sides. Add the sandwich to a heated frying pan with a drizzle or two of vegetable or corn oil. Cook on both sides until it’s golden brown. Serve with a tomato salad!

The “real” recipe uses an anchovy sauce but that’s not my thing. Feel free to enhance it with any flavors you like! Who needs “mozz sticks” when you can enjoy THIS!

    what’s the difference between this and spiedini alla romana? i have never understood… enlighten me, KA !!!!

    p.s. i lived in rome and never once did i see a SPIEDINI !!!! not once !!!!

      The difference is subtle but distinctive… Mozzarella En Carozza uses more of a “French toast” technique – dip in egg and fry. Spiedini Alla Romana uses a breadcrumb with grated cheese dip before frying. Both delicious. Both easy. Thanks for asking!
