Coconut Ciabatta French Toast!

Father’s Day is often punctuated with barbecues but how about going the Mom’s Day route and creating a sweet breakfast/brunch treat for dear old Dad? Yeah!

Ciabatta rolls are so delicious and versatile. I buy them by the bag so sometimes they can become stale before I can use them. That makes them PERFECT for French toast! Way, way back in the past, dousing bread in milk, eggs, and spices was how they were able to keep the bread from being wasted. Nowadays, we don’t usually wait for a hard heel of a scrap of bread to create such a yummy treat. You’re going to love this version especially if you’re a coconut fan!

Here’s how:

IMG_9729INGREDIENTS:
• 1 ciabatta roll
• 1 large egg
• 1/4 cup coconut milk
• 1/4 tsp cinnamon
• 1/4 tsp nutmeg
• 1 pinch salt
• 1 tbsp coconut oil
• 1/4 cup coconut flakes
• 1 tbsp honey

DIRECTIONS:
1) Cut roll in half. Set aside.
2) In a wide bowl, whisk egg, milk, cinnamon, nutmeg, and salt. Dip bread in egg mixture. Liberally add coconut flakes.  
3) Using a griddle, add coconut oil and, on medium-to-high heat, cook the bread until it’s golden brown on both sides.
4) Plate and sprinkle with additional coconut flakes and drizzle with honey.

My father can be goofy and call us different silly names. One of mine is “A-nut” so creating “A-coco-nut” dish for Father’s Day seems fitting. Happy Father’s Day to all!
