Truffled Chickpeas for an Emmy-azing Snack!

Tonight is the Emmy Awards! Although the Oscars are the awards I go crazy for, I really love to enjoy these TV awards like a couch potato and settle in with a simple snack and some prosecco. With Jimmy Kimmel hosting, it’s bound to be a great show!

Simple snack does not mean “ordinary”. After all, why settle for a potato chip when you can create Truffled Chickpeas in a snap!

Here’s how:

img_0033INGREDIENTS:
• 1/2 cup flour
• 1/2 tsp salt
• 1/2 tsp pepper
• 1/8 tsp cayenne pepper
• 1 15.5 oz can chickpeas, rinsed & drained
• 1 tbsp olive oil
• 1 tsp truffle oil

DIRECTIONS:
1) In a bowl, combine flour, salt, pepper, and cayenne. Add chickpeas and mix.
2) Sift out flour from chickpeas.
3) Heat olive oil over high heat in frying pan then add chickpeas. Sauté for about 5 minutes or until they become golden.
4) Remove to paper towel and blot excess oil. Drizzle on truffle oil and toss. Plate and serve!
