I celebrated my birthday this past week by heading to Broadway to see The Cher Show. If you get to New York City, definitely see it. What a great show!! It was the perfect one for this birthday. I was inspired. Love Cher!!! The plan was to head to swanky The 21 Club for apps and cocktails then off to a place called Marseille for dessert post-show. The best part about a birthday is everyone gives you cake in addition to what I ordered. Woo hoo!!

That had me thinking about birthday cakes through my life. I’ve never been a big fan of bakery cakes. Always too sweet. Not very consistent overall. So my birthday cakes have most often been from scratch, homemade. And more often than not, my mom has baked them, which makes them extra special!

Having a go-to sponge cake recipe is imperative for these special moments, although isn’t every moment that involves cake a special one? Ha! A versatile cake is not only a superstar on it’s own, but also works wonderfully as a base for scrumptious desserts like tiramisu, trifles, and more.

There are so many recipes out there that are so involved and that is not the way I roll. Hot milk versions… many steps versions… yeeeesh! I had to have a recipe where I could throw the ingredients together and get it in the oven in no time. And of course, it should taste like magic.

I am absolutely in love with this cake. It’s light, buttery, rich, and impressive. That moment when you take a bite and your whole body pauses to be enraptured by they flavor… the texture… ahhhhhhh. Yeah, it’s that good.

When you make this cake, you will be a big HIT! Get to it!

Ingredients
  1. • 1 cup sugar
  2. • 1 cup butter
  3. • 3 large eggs
  4. • 1/2 tsp vanilla extract
  5. • 1-1/2 cup flour
  6. • 2-1/4 tsp baking powder
  7. • 3/4 tsp salt
Instructions
  1. 1) Cream sugar and butter. Mix in eggs and vanilla.
  2. 2) Incorporate flour, baking powder, and salt until batter is well mixed. Pour into a greased & parchment–lined 9” cake pan.
  3. 3) Bake at 350° for 30-35 minutes or until golden brown and tester comes out clean. Cool for 5 minutes in the pan, then flip out to fully cool.
Notes
  1. If you choose to use a loaf pan or cupcake pan, adjust bake time accordingly.
