Red Pepper & Tomato Salsa!

I am presently at the most amazing place, Rancho La Puerta in Tecate, Mexico. It’s my sixth visit, the first in 10 years! I went with my mom once and she called it “shangri-la”! It’s lush and fragrant… there are several pools, the majestic Mt. Kuchumaa, and such wonderful people. It’s like an adult summer camp, where I’m swimming, hiking, and enjoying the organic cuisine.

I’ll share more when I am back but in honor of the ranch, I wanted to share my version of their salsa.

Here’s how:

IMG_0015INGREDIENTS:
• 2 plum tomatoes, diced
• 1 red pepper, diced
• 1/2 cup red onion, diced
• 2 scallions, chopped
• 1/4 cup cilantro, minced
• 1 jalapeño, diced
• salt to taste
• 1 lime, juiced

DIRECTIONS:
1) Add tomatoes, peppers, onion, scallions, cilantro, jalapeño, salt, and lime in a bowl. Mix well. Serve!

It couldn’t be more simple. The flavors are so complimentary! It’s a fiesta in your mouth! There’s a slight bit of heat from the jalapeño that’s countered by the fresh cilantro, and the lime and salt enhance and elevate all the flavors! It’s great when paired with eggs, grilled chicken or fish… even better with your favorite chips and a fruity cocktail! Did I mention it’s low-calorie too? Well it is!

It’s fail-proof and fabulous! Give it a go! You’ll be so happy.
