This is the first official weekend of Summer and it’s been SPECTACULAR here in New York. It’s a perfect day for the LGBTQ community (and the rest of us) to celebrate GAY PRIDE! 

Not only have each of our lives been touched and improved through the creativity, courage, and ingenuity of gay people throughout HISTORY, but on a personal note, my life is exponentially enhanced by my friends who are gay. They not only have to manage the hatred and brutality of the ignorance of people on a daily basis – in some cases including their very own families, but they have to carve out their lives in a world that is not “neutral” regarding them nor inclusive of them.

In honor of all the love warriors, I am highlighting the season and the movement with this rainbow fruit salad.

Different flavors, textures, colors… add a little spice with a bit of a kick and all of it is elevated beyond any of it on it’s own! Sorta like people, right? Woo hoo!

This day has come to celebrate not only the LGBTQ, but stand as a beacon of love for us ALL. Be authentic in all matters, especially those of the heart. “Love is love is love is love is love is love is love is love, cannot be killed or swept aside” was famously said by Lin-Manuel Miranda at the 2016 Tony Awards. In his hit play, The Bronx Queen, Joe Gulla says, “Breathe the way you breathe”. And, as the Beatles famously sang, “All You Need Is Love“. Yeah.

Rainbow Fruit Salad with Spicy Lime Mint Dressing

Servings 8

Ingredients
  

The Salad:

  • 1 pint blueberries
  • 1 pint blackberries
  • 3 kiwis, peeled and diced
  • 1 cup fresh pineapple, diced
  • 1 cup fresh mango, diced
  • 1 cup fresh papaya, diced

The Dressing:

  • 1/4 cup coconut oil
  • 1 lime, juiced
  • 3 tbsp fresh mint, mint
  • salt to taste
  • 1 tsp cayenne pepper

Instructions

  • Add fruit to a large bowl. Set aside.
  • Combine dressing ingredients in a small bowl and whisk until fully incorporated.
  • Pour dressing over fruit, toss, and enjoy.
