Pumpkin has become like Christmas… the marketing push starts in August… and it’s just not time yet. No… a thousand times NO! I like certain flavors and foods to herald seasons and holidays or else they lose an element of magic.

Now that we are officially in Pumpkin Season, I rejoice in it! It sings of leaves changing, weather getting crispy, Halloween, and Thanksgiving.

And what sings of festive mornings? Waffles. Light and airy with pockets where butter and syrup live. The expression when a waffle is presented… oh it’s the BEST!

It occurred to me that these two should be combined. Sort of like an homage to pumpkin pie in a baked breakfast treat. The results are intoxicating. The aroma of pumpkin and spices only pales in comparison to the taste. Such a good bite!

Adding a touch of fresh whipped cream with syrup and a sprinkle of pecans is how I like them but you can enjoy them old-school with a slather of creamy butter. No matter how you serve them, you’re going to love them and be a pumpkin hero!

Pumpkin Waffles!

Prep Time 10 minutes
Cook Time 10 minutes
Total Time 20 minutes

Ingredients
  

  • • 1 cup flour
  • • 1-1/2 tsp baking powder
  • • 1 tbsp brown sugar
  • • 1/2 tsp cinnamon
  • • 1/4 tsp ground ginger
  • • 1/8 tsp ground cloves
  • • 1/4 tsp salt
  • • 1 large egg
  • • 1 cup milk
  • • 3 tbsp butter melted
  • • 1/2 cup pure pumpkin purée

Instructions

  • In a large bowl, mix all ingredients.
  • Preheat waffle iron. Pour about 1/2 cup batter into center of the iron and close. Cook according to your iron’s manufacturer’s directions. Repeat until all batter is cooked. Serve immediately with butter, maple syrup, pecans, fresh fruit, whipped cream, ice cream… whatever you like!
