Lemons into Lemon Cookies

Many people ask what to do with a bunch of lemons. My first thought is to say make lemonade, however today I say make lemon cookies!  One of my favorite cookie recipes comes from my Aunt Grace. As kids, we would all (8 kids + parents) load into the car for a 3 hour drive every summer to visit Aunt Grace and Uncle Pete. When we arrived, we were met with fresh lemonade and these fresh baked cookies.

Use:

3 cups all-purpose flour,

1 tsp. baking powder,

1/2 tsp. salt,

1/2 cup butter,

1/2 cup margarine,

1-1/2 cups sugar,

2 large eggs,

1 tsp. lemon extract,

1 tsp. lemon zest,

and your choice of colored sugar or sprinkles.

Mix sugar, butter & margarine together. Add eggs, lemon extract &  lemon zest. Continue to mix for another 2 minutes or until it looks creamy. Add baking powder, salt & flour. Mix together for anther 2 minutes – don’t overmix!

Shape into a log and wrap in heavy-duty plastic wrap. Refrigerate until firm, at least 2 hours.

Slice the log into 1/2-inch thick rounds. Sprinkle with colored sugar. Arrange the cookies on baking sheets, spacing evenly, and bake until lightly browned, about 12 to 15 minutes. Remove from the oven, allow to cool slightly, then remove the cookies from the pans. Cool completely on wire racks before serving.
