First Appetizer Oscar Menu 2013: Link On

Here’s the recipe for Link On, our take on Lincoln.

Ingredients: 1-2 lbs. sausage links cut to 2-3″ pieces (quantity up to you), polenta log or polenta rounds (enough to accommodate the sausage pieces), 1-28oz. can crushed tomatoes, 1 medium onion, extra virgin olive oil, salt & pepper.

Directions: Preheat the oven to 450°. Cut polenta log into rounds – place on cookie sheet. Either spritz or brush olive oil across top & sprinkle salt & pepper to taste. Place in oven for about 15 minutes until they get slightly brown/set.

While that’s in the oven, dice about half the onion and put in a saucepan with a drizzle of olive oil. Sauté over medium heat for about 5 minutes until they become translucent. Add the crushed tomatoes, salt & pepper, and a touch more of olive oil. Stir & let simmer until you’re ready to serve.

Now take a frying pan, add olive oil to lightly coat the bottom, and on high heat, add the cut sausage pieces. Brown thoroughly, which should take about 8-10 minutes.

The polenta should be done by now. Plate the rounds, add a piece of sausage to the top of each, and drizzle tomato sauce over the top. Voila!

    Hi Janet. I believe we met at one of Eileen’s shows a few years ago. 🙂
    You should be able to find polenta logs in any supermarket. If there is a Trader Joe’s near you, they also sell it. Let me know how you do. Annette
