It’s A New Hack Attack! Berbere Seasoning & Corn Off A Cob In A Minute!

We’re gearing up for the 2019 Oscars® with these two hacks. This year’s Red Carpet Menu is awesome but these hacks will make achieving it that much easier!

Let’s start with the Berbere Seasoning. It’s spicy, it’s sweet, it’s SPECTACULAR! You can make it and store it for use on meats, in veggie dishes, and in this year’s Black Panther homage, Black PANtherb – haha – Skillet Herb & Cheese Biscuit Bites.

Berbere Seasoning

Ingredients
  

  • • 2-1/2 tsp coriander
  • • 1/2 tsp fenugreek
  • • 1/2 tsp black pepper
  • • 1/4 tsp cardamom
  • • 1/2 tsp garlic powder
  • • 1/4 tsp allspice
  • • 2-1/2 tbsp onion powder
  • • 1-1/2 tsp red chili pepper flakes
  • • 3 tbsp paprika
  • • 2 tsp kosher salt
  • • 1/2 tsp ground cinnamon
  • • 1/2 tsp ground ginger
  • • 1/2 tsp nutmeg

Instructions

  • 1) Mix ingredients in a bowl. Store in an airtight container.

Corn is excellent. A cob-ful dredged in butter and sprinkled with salt is just great. I always keep frozen niblets on hand but if fresh corn is around, why not use that in dishes? It’s easy to get the corn off a cob when you see how.

Just put a bowl on a folded kitchen towel to hold it steady, add a folded paper towel to the bowl to secure the cob, and holding it vertically at a bit of an angle AND using a sharp knife, just cut down the sides to “free” those niblets from the cob. When you’re done with one and want to do a second, just turn the paper towel over so the corn is below it and have at it!

Now using a bit of the Berbere seasoning on the corn… GENIUS! You’re gonna dig it!
