Asparagus with Roquefort & Walnuts!

Asparagus is one of my favorite veggies. Singular spears that can be prepared in so many delightful ways. As is a KitchAnnette staple, we adore quick and easy recipes – who the heck has the time or bandwidth for more day after day? This recipe couldn’t be more simple – steam and assemble!

Here’s how: 

INGREDIENTS:
• 1 bunch large asparagus
• 2 tbsp roquefort cheese, crumbled
• 1 tbsp extra virgin olive oil
• 2 tbsp walnuts, chopped
• salt & pepper to taste

DIRECTIONS:
1) Steam the asparagus in a pot with about an inch of boiling water for about 10 minutes or until slightly tender. Remove to serving plate.
2) Sprinkle on the cheese. Drizzle on the olive oil, Add the walnuts. Season with salt and pepper.

Snappy fast and incredible! The freshness, the cheesy tang, and the nutty crunch of the walnuts… yum! It pairs well with simply grilled steak or fish, chicken, lamb… the list goes on!
