3-Minute Baked Apple

The other day, I got home after an intense workout and was craving something sweet, which is rare. I didn’t want to undo the good work I’d just done for my body but I also didn’t want to just have a plain ol’ apple. And to know me is to know I LOVE apple desserts – apple pie being on the top of my list. It was then I thought about a baked apple BUT being impatient, I didn’t want to wait for it to bake in the oven (here’s the “old-fashioned” oven recipe). Gee… so many conditions I have for myself! Oh – and I’ll also point out, this thinking process to all of 30 seconds to get to the thought of “why not the microwave”? And so I made it and it was FABULOUS!!!

Here’s how:

IMG_8710INGREDIENTS:
1 apple
1/2 tsp sugar
1/2 tsp cinnamon
1/4 tsp vanilla
1 tsp pecans, chopped
2 tsp heavy cream or half & half

DIRECTIONS:
1) Wash and scoop out the core of your favorite kind of apple but don’t cut all the way through.
2) Sprinkle in the sugar and cinnamon. Drizzle in the vanilla. Add the pecans.
3) Microwave on high for 3 minutes. Remove and pour on the cream.

I was so thrilled with this quick recipe. The scent of apples and cinnamon wafting through the house is intoxicating!!! Customize to suit your sweet tooth: add raisins, nutmeg, use different nuts… whatever you like! I can’t wait to make it again!!!
